Keto Blackberry Cheesecake Bars

These keto-friendly cheesecake bars combine a buttery almond flour crust with a creamy filling made from cream cheese, blackberries, sour cream, and eggs. The crust provides a firm, nutty base while the filling is smooth with bursts of fresh blackberry for a subtle fruity note. The addition of lemon zest and vanilla extract brightens the overall flavor. Chilling before serving ensures the bars hold their shape when cut.

Description

Keto Blackberry Cheesecake Bars start with a crust made by blending finely ground almond flour with melted butter, an egg, a powdered erythritol sweetener, and vanilla extract. This mixture is pressed evenly into a baking dish and baked until set. The filling consists of cream cheese whipped smooth with eggs, sweetener, sour cream, lemon zest, vanilla, and fresh blackberries folded in to distribute fruit flavor throughout. After pouring over the crust, the bars bake until the center is just set, preventing cracking.

The result is a dense, creamy cheesecake with a moderately sweet and tangy flavor profile enhanced by berries and citrus. The almond crust's nuttiness complements the filling without overpowering it. Chilling the bars for 1-2 hours before serving firms them up for clean slicing. Optionally, serve with whipped cream and extra fresh blackberries for presentation and added texture.

This dessert is suitable for ketogenic diets as it avoids traditional sugar and wheat flour. The use of Swerve or erythritol simulates sweetness without increasing carbs. Ensure the blackberries are fresh for best texture; frozen berries may add excess moisture.
