Keto Chocolate Chip Cookie Fat Bombs

These Keto Chocolate Chip Cookie Fat Bombs are dense, buttery balls combining almond flour with both dark and sugar-free chocolate chips. The dough, flavored with vanilla and salt, is chilled for firmness, then dipped in melted sugar-free chocolate to create a candy-like coating. They offer a low-carb treat with a rich, cookie-inspired flavor profile.

Description

The recipe starts by creaming softened butter with erythritol powder, vanilla extract, and salt until light. Almond flour is mixed in to form a stiff dough studded with dark chocolate chips. After chilling, the dough is scooped into small balls, then dipped entirely into melted sugar-free chocolate to form a glossy outer layer. A brief freeze sets the coating solid.

The result is a bite-sized fat-rich snack with a creamy, almond-flour-based interior and a firm chocolate exterior. The use of erythritol and sugar-free chocolate chips keeps the net carb count low, making them suitable for ketogenic diets. The texture combines the softness of cookie dough with the snap of chocolate.

The recipe provides a specific net carb count of about 4.1 grams per fat bomb after adjusting for sugar alcohols, useful for carb tracking. These treats are convenient for portion control and can be stored frozen until ready to serve.

Ingredients

Servings
  • ½ cup butter softened
  • cup Swerve Confectioners Sugar (Erythritol sweetener)
  • 1 teaspoon vanilla extract pure
  • ½ teaspoon kosher salt
  • 2 cup almond flour
  • 9 ounces dark chocolate chips (I used Lily’s)
  • 8 ounces sugar-free chocolate chips (I used Hershey’s)

Instructions

  1. In a large bowl beat butter until light and fluffy, using a hand mixer. Mix in sugar, salt, and vanilla and mix until combined.
  2. Add in almond flour a little at a time and mix until dough consistency forms. Pour in dark chocolate chips and mix. Cover with plastic wrap and place in the refrigerator for 10-15 minutes.
  3. Remove dough from fridge and use a cookie scoop or measuring spoon to form 1-inch balls (about 1 heaping tablespoon). Place on a rimmed baking sheet lined with parchment paper.
  4. In a microwave-safe dish melt, sugar-free chocolate chips in 30-second increments, stirring between each round of heating until smooth.
  5. Dip each chilled fat bomb in melted chocolate and then put back onto the lined baking sheet. Place in freezer for 5 minutes, or until chocolate has hardened.

Notes

  • Each fat bomb contains approximately 4.1 grams net carbs after subtracting sugar alcohols and fiber.
