Ingredients
- 1 1/2 cup coconut flour
- 1/4 cup sugar substitute low carb
- 2 tablespoons baking powder
- 2 1/2 cups mozzarella cheese shredded
- 3 ounces cream cheese
- 3 egg beaten, large
- 3 tablespoons butter melted
- 1 teaspoon vanilla extract
Filling:
- 1/3 cup brown sweetener low carb
- 1 tablespoon cinnamon
- 4 tablespoons butter softened
Icing:
- 6 ounces cream cheese softened
- 6 tablespoons butter softened
- 1/2 cup confectioners powdered sweetener low carb
- 1 teaspoon vanilla extract
- 1 tablespoon coconut milk if needed, low carb
Instructions
- Grease a pie dish with melted butter and set aside.
- Mix coconut flour, low carb sweetener, and baking powder in a medium bowl. Set aside.
- Add mozzarella cheese and cream cheese to a large bowl, and microwave for one minute until melted. Stir.
- Add in beaten eggs, butter, vanilla extract, and coconut flour mixture until a dough is formed. The dough will be a bit wet and sticky. Cover with a kitchen towel and place in the fridge overnight.
Filling:
- When ready to bake, take the dough out of the fridge and roll out into a rectangle about 9×12 inches.
- Preheat oven to 400°F .
- In a medium bowl, combine the brown low carb sweetener with cinnamon, mix to combine. Spread butter evenly over the rolled dough, and then sprinkle the cinnamon sugar mixture on top.
- Roll dough into a log and slice into 1-inch thick rounds.
- Place the rounds into the prepared baking pan. Bake for about 13-15 minutes or until lightly browned.
- Allow to cool slightly before adding the icing.
Icing:
- In a medium mixing bowl, cream together the cream cheese and butter using a hand mixer.
- Beat in the powdered sweetener and vanilla extract, if the mixture is too thick add a bit of low carb milk coconut milk.
- Spread the icing over the cinnamon rolls, dust with a bit of ground cinnamon and serve.
