Keto Cinnamon Rolls

Keto Cinnamon Rolls use coconut flour and a blend of mozzarella and cream cheese to create a low-carb dough that is rolled with a cinnamon-sweetener filling and finished with a creamy icing. The dough is prepared ahead and chilled overnight to improve handling, then baked until lightly browned. These rolls balance a soft, slightly sticky texture with a sugary cinnamon flavor without typical flours or sugars.

Description

The Keto Cinnamon Rolls recipe combines coconut flour with low-carb sweeteners and cheeses to form a sticky dough that chills overnight for ease of rolling. The filling features a blend of softened butter with cinnamon and a brown sweetener substitute, spread over the rolled dough before slicing and baking. After baking at 400°F until golden, the rolls are topped with a rich cream cheese and butter icing sweetened with powdered sweetener and vanilla. This method results in cinnamon rolls that maintain a tender crumb with familiar flavors adapted to a keto diet.

The rolls offer a blend of creamy and cinnamon notes, with a soft interior from the cheese-based dough and a caramelized, spiced filling. The cream cheese icing adds smooth sweetness and moisture. These can serve as a low-carb breakfast or treat option.

Preparing the dough the day before by chilling improves its pliability and final texture. Baking until lightly browned is key to prevent drying out. The icing is best applied just after cooling slightly to avoid melting excessively.
