Keto Cookie Dough Bites

Keto Cookie Dough Bites were made for yummy low-carb snacking because nothing stands between you and delicious cookie dough, not even carbs!

Ingredients

  • 1 cup almond flour fine-ground
  • ¼ cup peanut butter sugar-free
  • cup dark chocolate chips Lily's brand
  • 2 tablespoons erythritol powdered
  • 1 tablespoon coconut oil melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • salt for garnish (optional, sea salt

Instructions

  1. Stir together all of the ingredients in a medium mixing bowl until well combined.
  2. Use a cookie scoop (or 1 tablespoon measuring spoon) to portion the cookie dough onto a parchment paper-lined baking sheet. Roll each scoop into a ball.
  3. Chill in the refrigerator for 30 minutes. Enjoy immediately or store in an airtight container for up to 4 days in the fridge. (Sometimes I like to sprinkle the tops of the cookie dough balls with a little sea salt too.)

Notes

  • The carbs listed for each cookie dough bite 14 grams. After subtracting the sugar alcohols and dietary fibers from the erythritol and dark chocolate chips, each bite has a net carb amount of 7 grams.
