These easy to make Keto Cream Cheese Cookies are pillowy soft, buttery, and melt-in-your mouth delicious.

Ingredients
- 2 cups almond flour Super Fine
- ¼ cup oat fiber
- ¾ cup Monk Fruit Sweetener or allulose
- ½ cup butter room temperature, unsalted
- 4 ounces cream cheese room temperature
- 1 egg room temperature, whole
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- pinch salt
- Monk Fruit Sweetener or allulose, powdered, for the tops, optional
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, cream together the butter and cream cheese using a hand mixer, until well combined.
- Add in the egg, sweetener and vanilla extract, then continue mixing.
- In a separate bowl, add in the almond flour, oat fiber, baking powder and salt. Whisk to combine, then pour into the cream cheese mixture. Mix just until combined, do not over mix.
- Chill the dough in the fridge for 1 hour. This will make it much easier to form the cookies and will hold their shape better.
- Using a cookie scoop, form a ball with the dough, then place it on a baking sheet lined with parchment paper. Slightly flatten it using your hand, but don’t completely flatten them. Repeat with the remaining dough and you should get around 30 cookies in the batch.
- Bake for 10 minutes or until slightly golden. Allow them to cool for a few minutes on the baking sheet before moving them to a cooling rack. Let them cool completely before topping with the (optional) powdered sweetener and serving.
