Keto Creamy Chicken Marsala
Description
The preparation begins by quickly sautéing seasoned thin chicken breast slices until lightly browned. Removing the chicken allows mushrooms to caramelize in the same pan, concentrating their flavor. Garlic is added briefly to avoid burning, before deglazing with marsala wine to lift flavorful brown bits from the pan.
Chicken stock and parsley are incorporated before returning the chicken to simmer. The dish simmers uncovered to meld flavors and tenderize the chicken. After removing the chicken again, the sauce is thickened with mascarpone cheese, adding richness and creaminess typical of traditional Marsala preparations without adding carbs.
The finished dish is garnished with parsley and pairs well with low-carb vegetables or salads to complement its savory, creamy profile.
Ingredients
- 1 ½ pounds chicken breast sliced thinly
- 8 ounces baby bella mushroom sliced
- 1 ½ cups chicken stock
- ½ cup marsala wine
- ¼ cup mascarpone cheese
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons butter grass-fed
- 1 tablespoon parsley chopped, fresh
- ½ teaspoon basil dried
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Heat the olive oil in a large skillet over medium high heat. Sauté the chicken, and season with basil, salt and pepper, about 3 minutes on each side. Remove the chicken and set aside.
- Add the butter to the pan, then sauté the mushrooms. Allow them to get some good color, then push to one side. Add in the garlic and sauté for 20 seconds, careful not to burn it!
- Deglaze the pot with the marsala wine, scraping up the brown bits on the bottom. Stir in the chicken stock and most of the parsley (reserving some for garnish) then add the chicken back in. Simmer for 10 minutes over medium heat, uncovered.
- Remove the chicken and cook another 5 minutes to allow the sauce to thicken. Stir in the mascarpone cheese and cook an additional 5 minutes or until thickened. Add the chicken back in just to heat it through. Top with a garnish of parsley and serve along side your favorite Keto-friendly veggie or salad!
