This keto fruit pizza is a delicious grain and nut free dessert for a crowd. Sturdy cookie crust with a creamy whipped cream pizza topping with fresh berries.

Low Carb Cookie Crust

  • 1 1/2 cups low carb baking mix
  • 1/3 cup sugar free sweetener confectioners
  • 2 eggs large
  • 2 teaspoons vanilla extract
  • 1/4 cup butter melted and cooled
  • 1/2 cup milk

Dessert Cream Topping

  • 1 ounce cream cheese at room temperature
  • 1/4 cup sugar free sweetener confectioners
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Fruit Toppng

  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1/2 cup raspberries

Instructions

Low Carb Cookie Crust

  1. In a large mixing bowl whisk together the baking mix, and sweetener.
  2. In a separate medium size mixing bowl beet the eggs, vanilla, cooled butter and milk together until well blended.
  3. Form a well in the center of the baking mix and add the wet ingredients. Stir until combined. Let sit for 5 minutes for the ingredients to absorb the moisture.
  4. Place cookie dough on a piece of parchment paper. Top with another piece of parchment paper and with a rolling pin roll dough into a 9-inch circle. Place on a baking sheet.
  5. Bake at 325°F for 20 minutes or until dough is set. Let cool completely.

Dessert Cream Topping

  1. In a large mixing bowl beat the cream cheese and sweetener together until smooth and creamy.
  2. Add heavy whipping cream and vanilla. Beat until soft peaks form and the whipping cream doubles in size.

Fruit Topping

  1. Clean and dry fruit.
  2. Slice each strawberry into four pieces.

Assemble Keto Fruit Pizza

  1. Place prepared cookie crust on a sturdy serving platter.
  2. Add dessert cream and spread evenly over the cookie.
  3. Add fruit on top of dessert cream.
  4. Slice and enjoy!

Notes
