Keto Ham & Cheese Egg Crepe
Description
The Keto Ham & Cheese Egg Crepe combines eggs beaten with whipping cream, salt, and pepper to form a thin batter cooked gently in butter. Parmesan cheese is sprinkled evenly over the almost cooked egg surface before it is topped with easy-melting cheese slices and ham. The crepe is folded over the fillings and heated until the cheese melts, creating a soft, rich, and savory folded crepe. The blending of Parmesan adds a sharp note contrasting with the smooth melted cheese and savory ham.
The use of a large non-stick skillet to spread the eggs thinly helps achieve a delicate texture similar to a traditional crepe. Folding over the crepe to enclose the fillings allows for an even melt and warming of the ham.
This egg-based crepe works well as a hearty breakfast or light meal, especially for those following a low-carb diet. It complements simple sides or can be enjoyed on its own.
For smaller skillets, the batter can be split and cooked in layers, stacking them with cheese and ham for a similar effect. This is a flexible recipe that adapts to skillet size to ensure a thin crepe texture.
Ingredients
- 2 egg large
- ½ tablespoon whipping cream
- ⅛ teaspoon salt
- black pepper to taste, ground
- 1 tablespoon butter to fry
- 2 tablespoons Parmesan Cheese grated
- 2 lices cheese use an easy to melt cheese like mozzarella or gouda
- 2 lices ham
Instructions
- Beat 2 large eggs with 1/2 tablespoon whipping cream, 1/8 teaspoon salt and ground black pepper.
- Melt 1 tablespoon butter on a non-stick large skillet.
- Pour the egg mixture, thinly covering the whole surface of the skillet, and sprinkle 2 tablespoons grated Parmesan cheese evenly ton top.
- Place 2 slices cheese on one half of the crêpe, then 2 slices ham on top of the cheese. Cover the pan until the cheese is melted.
- Carefully, fold the half of the crêpe without fillings over the half with the fillings. Slide onto a plate.
Notes

- Cook the crepe thinly for better folding and even melting of the cheese and ham.
