Keto Key Lime Pie Cheesecake
Description
The Keto Key Lime Pie Cheesecake assembles a smooth mixture of room-temperature cream cheese blended with sugar-free condensed milk, incorporating lime juice and zest for citrusy brightness. The filling thickens as it chills in a no-bake keto graham cracker crust made from almond flour, ensuring a tender, crumbly base that contrasts with the creamy top layer.
The dessert delivers a clean, tart flavor profile tempered by the rich, silky filling. The lime zest adds aromatic lift but can be reserved as a garnish for a smoother texture. After at least eight hours refrigerated setting, the pie holds its shape well yet remains soft enough to slice cleanly.
This pie is suitable for keto diets and can be presented simply or with sugar-free whipped cream and lime slices. Using a removable-bottom pan and buttering the pan bottom help with serving neat slices. Sweetness can be adjusted with keto-friendly sweeteners to taste.
Ingredients
Pie crust
- 1 graham cracker pie crust keto recipe
Filling
- 2 cups sweetened condensed milk sugar-free
- 16 oz cream cheese (room temperature)
- ⅓ cup lime juice or regular lime juice, fresh, key lime
- 2 teaspoons lime zest
Optional garnishes
- Whipped Cream sugar-free
- lime slices
Instructions
- Make a double recipe of sugar-free condensed milk - simply double the amount of ingredients. Let it cool to room temperature.
- Make this keto pie crust or your favorite almond flour crust. Don't bake the crust, keep it in the fridge while preparing the pie filling.2 teaspoons lime zest
- Add the cream cheese and the sugar-free condensed milk to a large bowl, and mix with a hand mixer until smooth.
- Whisk in the lime juice and the lime zest (or you can set the zest aside and add as topping, see notes) until fully combined. The mixture will seem thicker.
- Taste the pie filling, you can adjust sweetness now if desired by adding some keto sweetener to taste.
- Pour the pie filling into the Graham cracker crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
- Add garnishes after pie is set, just before serving.
Notes
- Use a 9-inch pie pan with a removable bottom, greased and lined with parchment for easier slicing and serving.
- If you prefer a smooth texture without the lime zest, add the zest only as a topping just before serving.
- Adjust sweetness by adding keto sweetener, preferably liquid types like stevia or monk fruit drops for quick dissolving.
