  • 1 baking powder 1/2 teaspoon
  • 2 Tablespoons swerve (erythritol sweetener granular form
  • 1/4 teaspoon vanilla
  • 1 Tablespoon lemon juice
  • 1 egg
  • 1 Tablespoon butter melted, or coconut oil
  • 1 lemon zest divided, 1/2 teaspoon

Instructions

  1. In a microwave safe mug (8 ounce), mix together the almond flour, coconut flour, baking powder and Swerve.
  2. Add the egg, butter, vanilla, lemon juice and half of the lemon zest. Mix until throughly combined.
  3. Sprinkle the remaining lemon zest on top.
  4. Cook the mug cake for 1 1/2-2 minutes or until the top is set and fully cooked.
  5. Sprinkle with powdered Swerve or whipped cream (optional).
