- 1 lemon zest divided, 1/2 teaspoon
Instructions
- In a microwave safe mug (8 ounce), mix together the almond flour, coconut flour, baking powder and Swerve.
- Add the egg, butter, vanilla, lemon juice and half of the lemon zest. Mix until throughly combined.
- Sprinkle the remaining lemon zest on top.
- Cook the mug cake for 1 1/2-2 minutes or until the top is set and fully cooked.
- Sprinkle with powdered Swerve or whipped cream (optional).
