Description
This recipe blends equal parts ground beef and Italian pork sausage, ensuring a balance of robust flavor and moisture, combined with shredded mozzarella and grated Parmesan cheese for richness. Eggs bind the mixture alongside garlic, onion powder, kosher salt, Italian seasoning, black pepper, and crushed red pepper flakes, adding mild spice and depth. The meatballs are portioned and baked in a casserole dish at 400°F till no longer pink inside, then drained of excess grease.
Afterwards, marinara sauce is spooned over each meatball and topped with the remaining mozzarella, baked briefly until the cheese melts and bubbles, creating a flavorful crust. The dish is optionally garnished with fresh basil or parsley to introduce freshness.
These meatballs offer a satisfying, cheesy, and savory meal component that fits well into ketogenic or low-carb diets, suitable for serving alongside vegetables or low-carb sides without breading.
Ingredients
- 1 lb ground beef (80/20 mix is good)
- 1 lb Italian pork sausage ground, bulk
- 2 cups mozzarella cheese shredded, divided
- 1/2 /2 cup Parmesan Cheese grated
- 2 large egg
- 2 teaspoons garlic fresh, minced cloves
- 2 teaspoons onion powder
- 2 teaspoons kosher salt coarse
- 1/2 /2 teaspoon Italian seasoning
- 1/2 /2 teaspoon black pepper fresh ground
- 1/2 /2 teaspoon red pepper flakes crushed
- 1 cup marinara sauce I like Rao's brand, or pizza sauce
- (optional) basil or parsley for topping
Instructions
- Preheat your oven to 400 degrees F and spray a 9x13 casserole dish with cooking spray.
- In a large bowl, combine the beef, pork, 1 cup of mozzarella cheese, Parmesan, eggs, spices, garlic, and salt and pepper.
- Using a scoop, make 20 meatballs and place in the casserole dish.
- Bake for 15 to 20 minutes or until meatballs are no longer pink in the middle. Remove pan from the oven and drain the grease.
- Spoon the marinara sauce on top of each meatball and sprinkle the remaining 1 cup of mozzarella cheese on top. Bake for 5-10 minutes or untll the cheese is nice and melted. Garnish with basil and parsley if desired and serve.
