For the Berries

  • 2 cups blackberry
  • ½ cup blueberries fresh
  • 1 cup raspberries fresh
  • 3 tablespoons  Monk Fruit Sweetener or allulose
  • lemon juice and zest of ½ lemon
  • ¼ teaspoon xanthan gum

For the Crumb Topping

  • 1 cup almond flour Super Fine
  • cup pecans chopped
  • ¼ cup butter melted, grass fed
  • ¼ cup swerve (erythritol sweetener brown
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 375°F.  Mix the swerve and Xanthan gum in a cup, then set aside.
  2. Add the berries, lemon juice and zest to a large bowl.  Sprinkle the sweetener and xanthan gum over the top and toss until well coated.  Pour the mixture into a buttered glass or ceramic baking dish.
  3. In a separate bowl, add all the crumble topping ingredients, except for the brown sweetener and butter, then whisk.  Mix in the brown sweetener and melted butter. Sprinkle the crumble over the top of the berries.
  4. Bake for 30 minutes, then increase the temperature to 425°F and bake for an additional 5 minutes or until the crumble is crisp.  Allow to cool slightly before serving with a scoop of Keto Vanilla Ice Cream or whip cream on tpp.

Notes

  • If the topping browns too fast, tent it lightly with foil to prevent burning while juices bubble.
  • If monk fruit/allulose sweetener is unavailable, monk fruit or Swerve can substitute, but keep brown Swerve for the topping to maintain crispness.
  • Chopped walnuts can replace pecans if desired without affecting the texture significantly.
