For the Filling

  • 16 ounces cream cheese room temperature
  • 1 cup lime curd key lime
  • ½ cup heavy cream
  • ½ cup sour cream
  • cup allulose confectioners
  • ½ teaspoon vanilla extract

For the Crust

  • 1 ¼ cups almond flour
  • ¼ cup pecans toasted and chopped
  • 4 tablespoons butter melted
  • 1 tablespoon swerve (erythritol sweetener brown
  • 1 tablespoon allulose confectioners
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon vanilla extract

Instructions

To Make the Crust

  1. Add the almond flour, pecans, Brown Swerve, cinnamon, nutmeg and Allulose in a mixing bowl and whisk until combined.
  2. Pour in the melted butter and vanilla, and continue mixing until it resembles the texture of wet sand.

To Make the Cheesecake Filling

  1. Add the cream cheese to a large mixing bowl and whip using a hand mixer for 1-2 minutes. Add in the sour cream and continue mixing.
  2. Add in the key lime curd, vanilla and Allulose and mix until combined.
  3. In a separate bowl, whip the heavy cream to soft peaks, then mix it into the cheesecake filling mixture. Continue mixing until everything is well combined.

To Assemble the Cheesecake Cups

  1. Add some of the crust mixture to the bottom of a small jar or mini canning jar and press down to form a crust.
  2. Add some of the cheesecake filling over the top, then chill in the fridge at least 1 hour before serving with a garnish of lime zest and/or whip cream on top.
