Ingredients
For the Filling
- 16 ounces cream cheese room temperature
- 1 cup lime curd key lime
- ½ cup heavy cream
- ½ cup sour cream
- ⅔ cup allulose confectioners
- ½ teaspoon vanilla extract
For the Crust
- 1 ¼ cups almond flour
- ¼ cup pecans toasted and chopped
- 4 tablespoons butter melted
- 1 tablespoon swerve (erythritol sweetener brown
- 1 tablespoon allulose confectioners
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon vanilla extract
Instructions
To Make the Crust
- Add the almond flour, pecans, Brown Swerve, cinnamon, nutmeg and Allulose in a mixing bowl and whisk until combined.
- Pour in the melted butter and vanilla, and continue mixing until it resembles the texture of wet sand.
To Make the Cheesecake Filling
- Add the cream cheese to a large mixing bowl and whip using a hand mixer for 1-2 minutes. Add in the sour cream and continue mixing.
- Add in the key lime curd, vanilla and Allulose and mix until combined.
- In a separate bowl, whip the heavy cream to soft peaks, then mix it into the cheesecake filling mixture. Continue mixing until everything is well combined.
To Assemble the Cheesecake Cups
- Add some of the crust mixture to the bottom of a small jar or mini canning jar and press down to form a crust.
- Add some of the cheesecake filling over the top, then chill in the fridge at least 1 hour before serving with a garnish of lime zest and/or whip cream on top.
