Keto Peach Cobbler

Warm and juicy peaches baked in a sweet cinnamon sauce with a fluffy buttery topping makes this Keto Peach Cobbler a satisfying dessert!

For the Filling

  • 5 peaches (average size) peeled and sliced
  • 2 tablespoons monk fruit/allulose
  • 1 tablespoon brown monk fruit/allulose
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon xanthan gum

For the Topping

  • 1 ¼ cups Super Fine Almond Flour
  • cup unsweetened almond milk
  • ¼ cup monk fruit/allulose
  • ¼ cup butter melted
  • 1 whole egg beaten
  • 2 tablespoons oat fiber
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat oven to 350°F. Peel the peaches, remove the pits and slice into thin slices.
  2. Add the peaches to a nonstick skillet, along with the lemon juice, xanthan gum, cinnamon and sweetener. Bring to a simmer and cook on low for 5 minutes.
  3. Remove from the heat and pour into a well-buttered 9 x 9 baking dish.
  4. In a mixing bowl, add in the almond flour, oat fiber and baking powder, whisk until combined.
  5. In another bowl, add in the almond milk, sweetener, melted butter, egg and vanilla extract and whisk. Pour into the dry ingredients and mix just until combined.
  6. Using 2 spoons, dollop the batter over the peaches and bake for 25-30 minutes or until the top is cooked through and lightly golden.
  7. Serve as is or with a scoop of Keto vanilla ice cream.

Notes

  • The amount of sweetener that you use with the peaches can vary depending on how ripe and sweet your peaches are. Mine were sweet and juicy, so the amount in the recipe was spot on. If your peaches aren’t very sweet or as ripe, you’ll want to use a little more sweetener.
  • If you don't have brown monk fruit/allulose, you can substitute with brown Swerve.
