Keto Shrimp Alfredo

This Alfredo sauce is out of this world fantastic!  Smooth and creamy, packed with freshly grated parmesan cheese flavor!

Ingredients

Servings
  • 24 ounces Shrimp peeled, deveined with tails on, jumbo
  • 24 ounces palmini hearts of palm "pasta"
  • 1 ½ cups Parmesan Cheese grated
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • ¼ cup butter
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Heat a large skillet to medium heat.  Add in the olive oil, then add in the shrimp.  Sauté for a few minutes, until they are just turning pink, then remove and set aside.
  2. Add in the butter, and once melted, sauté for about 20 seconds, making sure not to brown it.  Add in the mascarpone cheese, once that has melted, pour in the heavy cream, salt and ground black pepper.
  3. Add in the parmesan cheese, and simmer for 5-7 minutes or until thickened.
  4. Add in the Palmini noodles and toss in the sauce. Top with the shrimp and it's ready to serve.

Notes

  • Macros are for the shrimp and Alfredo sauce only. Be sure to adjust your macros, depending on what you serve it with.
