Keto Strawberry Cheesecake Popsicles start with fresh strawberries pureed partially to keep some fruit texture and flavor. Heavy whipping cream and cream cheese create the rich, smooth base. The recipe uses allulose sweetener to keep the popsicles from freezing too hard, offering a pleasant scoopable consistency. Lemon juice and vanilla extract add brightness and depth to the flavor. The popsicles are frozen in molds for several hours until firm. Optionally, crushed keto-style graham crackers can be pressed on top before freezing for added texture and slight crunch.

The resulting frozen pops have creamy, slightly tangy cheesecake notes combined with the natural sweetness and slight tartness of strawberries. Ingredients

  • 2 cups strawberries hulled and chopped, fresh, organic
  • 1 ½ cups heavy whipping cream
  • 1 cup cream cheese
  • ½ cup allulose
  • 2 teaspoons lemon juice fresh
  • 1 teaspoon vanilla extract pure
  • Optional graham crackers crushed, keto style

Instructions

  1. Add the strawberries to the bowl of a food processor and pulse a few times.  Scoop out ½ cup of the strawberries and set aside.  Add in the remaining ingredients and process until well combined.  
  2. Remove the blade and stir in the reserved ½ cup of strawberries.
  3. Pour the strawberry cream cheese mixture into silicone popsicle molds. Add some of the (optional) crushed graham crackers on top and press them in. Add the popsicle sticks in, cover and freeze at least 3 hours or overnight.

Notes

  • Using allulose helps prevent the popsicles from freezing too hard; monk fruit sweetener can substitute but in a smaller amount.
  • The crushed keto graham crackers on top add texture but are optional and not included in nutritional calculations.
  • Freeze the popsicles for at least 3 hours or overnight to ensure firm texture.
