Ingredients

Mug Cake:

  • 1 ⅓ tablespoon almond flour
  • 2 teaspoon golden flaxseed meal
  • 1 tablespoon erythritol
  • ¼ teaspoon baking powder
  • 1 egg large, yolk
  • 1 tablespoon heavy cream
  • ½ teaspoon vanilla extract
  • ½ teaspoon lemon juice

Strawberries & Cream:

  • 1 strawberry diced, medium
  • 1 tablespoon cream cheese softened
  • 1 teaspoon erythritol powdered

Instructions

  1. Measure out and prepare all of the ingredients.
  2. Blend almond flour and golden flaxseed meal in a blender.
  3. Mix the blended almond flour and golden flaxseed meal with baking powder and erythritol. Stir to combine well.
  4. Add in the egg yolk. vanilla extract, lemon juice, and heavy cream. With a mixer, mix for about 30 seconds.
  5. Spray the inside of a mug with cooking spray, then add in the mug batter. Top with the diced strawberries. Microwave for 60 seconds.
  6. Combine the softened cream cheese and powdered erythritol in a bowl. Stir to combine well. Top the mug cake with this.
  7. Dust the mug cake with powdered erythritol.
  8. Serve and enjoy!
