Keto Strawberry Lemonade Muffins

Ingredients
For the Muffins
- 1 ¾ cups almond flour
- 1 cup fresh strawberries chopped
- ½ cup monk fruit/allulose confectioners
- ¼ cup oat fiber see notes
- 2 whole eggs
- ½ cup butter melted
- ½ cup sour cream
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
For the Icing
- ¼ cup monk fruit/allulose confectioners
- 1 tablespoon fresh lemon juice
- 1-2 teaspoons heavy cream or as needed

Instructions
To Make the Strawberry Lemonade Muffins
- Preheat oven to 350°F. Add the almond flour, oat fiber, baking powder and salt to a mixing bowl and whisk to combine.
- In a separate bowl, add in the eggs, sour cream, butter, vanilla extract, lemon juice and zest and mix until well combined. Add in the monk fruit/allulose and continue mixing.
- Combine the wet and dry ingredients and mix until everything just until combined, then fold in the chopped strawberries.
- Using an ice cream scoop, add in the batter to 12 silicone muffin cups or a muffin pan that's been sprayed with nonstick spray.
- Bake for 20-23 minutes or until a toothpick, when inserted comes out clean. Allow them to cool while you make the icing.
To Make the Sugar Free Lemon Icing
- Add in all the icing ingredients and whisk until combined. Start with a tiny bit of the heavy cream and add a little at a time, until you get the consistency of icing.
- Drizzle the icing over the cooled muffins and allow to set before serving. Store leftovers in the fridge in an airtight container for several days or freeze.
Notes
- Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. - To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
