Keto Stuffed Onion Bombs
Description
Keto Stuffed Onion Bombs start by cutting off and peeling medium-sized onions, then removing their inner layers to create hollow shells about half an inch thick. Each onion is placed in a casserole dish ready to be filled. The filling is a mixture of ground beef (or beef and pork), egg, Italian seasoning, ground pork rinds for binding and texture, Parmesan cheese for umami, and Worcestershire sauce for depth. The meat mixture is packed into the onion shells, creating a cavity in the center where a quartered piece of cheddar cheese is inserted before filling completely.
The stuffed onions bake in a 350°F oven for 35-45 minutes, allowing the onions to become soft and tender, while the meat cooks through and the cheese melts inside. The combination balances the natural sweetness of caramelized onions with the savory, spiced ground meat and creamy melted cheese, all in a convenient, individual portion.
This dish suits those seeking a hearty, low-carb meal containing familiar flavors enhanced by cheese and warming herbs. It can serve as a main course or a substantial side.
Ingredients
- 4 onion medium-sized
- 1/2 lb ground beef or mixture of beef and pork
- 1 egg
- Italian seasoning to taste
- 1/4 cup pork rinds ground
- 2 Tablespoons Parmesan Cheese
- Worcestershire sauce to taste
- 2 ounces cheddar cheese quartered
Instructions
- Preheat oven to 350°F.
- Cut the ends off each end of the onion, peel, and then remove the inner layers. Your onion should be a bottomless, hollow shell, about 1/2" thick.
- After all onions are peeled and hollowed-out, place them in a casserole dish.
- In a medium-sized mixing bowl, combine the ground beef, egg, Italian seasoning, pork rinds, Parmesan cheese and Worcestershire sauce.
- Press about one tablespoon of the meat mixture into each onion (the exact amount you use will depend on the size of your onions).
- Press down with your fingers to compact the meat, making an indentation in the middle of your meet where you can insert a cube of cheese.
- Fill your onions to the top with more meat mixture, to cover the cheese.
- Bake for 35-45 minutes.
