Description
The Key Lemon Pie features a crisp graham cracker crust filled with a custard-like mixture of sweetened condensed milk, egg yolks, and fresh Key lime or lemon juice and zest. The tart citrus brightens the rich filling, which is baked at a moderate temperature to thicken and then chilled to fully set. The lemon zest provides fresh aromatic notes without any bitterness, emphasizing the lime's acidity and the sweetened condensed milk's richness.

Ingredients
- 14 ounces sweetened condensed milk 1 can
- 4 egg large yolks
- 1/2 cup lemon juice about 3-4 lemons, fresh
- 2 teaspoons lemon zest no white, fine
- 1 Graham Cracker Crust gluten-free if desired
- Whipped Cream lemon zest and lemon slice(s) for garnish, optional
Instructions
- Zest, then juice lemons, to get 2 teaspoons of zest and 1/2 cup of juice.
- Whisk together sweetened condensed milk, egg yolks, zest and lemon juice (add half at a time) until well combined.
- Pour filling into prepared crust and bake for 15 minutes at 350 F. Cool pie completely on rack, then chill for a minimum of 1-2 hours (filling will continue to set as it cools). Store covered.
- Optionally, before serving, top with whipped cream rosettes, lemon zest and lemon slice(s)
