- 2 cups sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup butter , melted
- 1/4 cup lime juice fresh
- 3/4 cup water boiling
- 2 large egg beaten
- 1/2 cup buttermilk
- 2 teaspoons vanilla extract
- lime zest
Frosting
- 1/2 cup butter , melted
- 4 cups powdered sugar
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- 2 teaspoons lime juice
- lime zest for garnish
Instructions
- Preheat oven to 400 degrees F.
- Grease 11x17 rimmed baking sheet with non-stick cooking spray.
- In a large bowl, whisk together sugar, flour, baking soda and salt.
- Stir in melted butter and boiling water and lime juice.
- Mix in vanilla, buttermilk, eggs and lime zest. Stir until smooth.
- Pour batter into baking sheet and bake for 15-17 minutes. (Until toothpick inserted comes out clean.)
- Cool cake for 15 minutes.
- In a medium bowl, stir together melted butter, powdered sugar, milk, vanilla and lime juice. Stir until smooth.
- Spread frosting on cake.
- Top with extra lime zest for garnish.
