Kielbasa and Cabbage

Kielbasa and Cabbage combines smoky, sliced kielbasa sausage with tender, simmered cabbage enhanced by onion, garlic, and apple cider. The addition of brown sugar and Dijon mustard balances the savory flavors with a slight sweetness and tang. Caraway seeds add a subtle aromatic note, contributing depth to the dish. Simmered until the cabbage is soft and the liquid reduces, this hearty one-pan meal is practical for easy preparation and cleanup.

Description

The Kielbasa and Cabbage recipe features smoked kielbasa thinly sliced and browned to bring out its smoky character. Cooked alongside sautéed onion and garlic, the sausage flavors meld with coarsely chopped cabbage. Apple cider serves as the simmering liquid, complemented by brown sugar for sweetness and mustard for sharpness. Lightly crushed caraway seeds contribute a pleasant earthiness. The covered simmer softens the cabbage, while uncovered cooking reduces excess liquid, concentrating the flavors. This dish yields a warm, tender combination with a balance of smoky, sweet, and tangy elements.

The resultant dish works well as a standalone main or paired with simple sides like potatoes or crusty bread. It fits well into casual weeknight meals where a satisfying combination of sausage and vegetables is desired without complicated steps.

Ingredients

Servings
  • 1 pound smoked kielbasa bias-cut into 1 inch thick slices
  • 2-3 teaspoons olive oil divided
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 head cabbage small to medium, 1 1/2 to 2 1/2 pounds, cored and coarsely chopped or sliced
  • 1 ½ cups apple cider or beer or wine or broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds lightly crushed*
  • 1 Tablespoon Dijon mustard
  • salt to taste
  • black pepper to taste

Instructions

  1. Slice the kielbasa on the diagonal (or bite-sized).
  2. In a Dutch oven or large sautee pan cook the kielbasa in 2 teaspoons hot oil over medium-high heat until browned, about 5 minutes. Remove and set aside. Drain partially if there is excessive fat in the pan (there was none in my pan)
  3. If needed, add remaining teaspoon of oil, then add onion and garlic to the pot. Cook until onion is tender, 5-10 minutes.
  4. Stir in the remaining ingredients. including the reserved kielbasa, and bring to a boil. Reduce heat and simmer, covered, until cabbage is tender, about 15-20 minutes. Uncover and continue cooking until liquid is reduced, about 10 minutes.
