Kimchi Fried Rice
Description
This Kimchi Fried Rice recipe starts with finely minced garlic and diced onion sautéed in neutral oil until fragrant. Adding chopped kimchi along with some of its juice provides acidity and spice, which infuse the dish. The cooked white rice is stirred in to absorb the flavors and achieve a loose, separate grain texture.
Seasoned with soy sauce and a small amount of toasted sesame oil, the dish develops an umami depth balanced by the pepper’s heat. Scallions add a fresh bite and color contrast. The ingredients are cooked quickly over high heat to maintain brightness and avoid sogginess.
Adding a sunny-side-up egg on top is traditional, lending creaminess and richness that complement the tangy, spicy fried rice. This dish is a practical meal for using leftover rice and kimchi, offering complex flavors with minimal ingredients and effort.
Adjust the kimchi amount according to taste for milder or more intense spiciness, as preferred.
Ingredients
- 2 tablespoons neutral cooking oil generic cooking oil
- 1 clove garlic finely minced
- 1/4 onion finely diced, small
- 1/2 cup kimchi cut into small pieces + 1 tablespoon kimchi juice
- 2 cups white rice overnight steamed
- 1 tablespoon soy sauce or to taste
- 1/4 teaspoon sesame oil
- 3 dashes black pepper ground
- 1 talk scallion cut into small rounds
Instructions
- Heat a wok or skillet over high heat. Add the oil. Once the oil is hot, sauté the garlic and onion until aromatic. Add the kimchi and stir quickly before adding the rice. Stir to combine well.
- Add the soy sauce, sesame oil, black pepper, and scallions. Stir a few times to blend with the rice. Dish out and serve immediately.
- You can fry an egg sunny-side up and serve it on top of the kimchi fried rice.
Notes
- Use generous amounts of kimchi for a spicier and more flavorful dish; reduce kimchi if you prefer a milder taste.
- Top the fried rice with a sunny-side-up egg to add creaminess and balance the dish.
