Description

The Kimchi Udon recipe features udon noodles tossed with pork cooked until partially browned, followed by the addition of sliced onions and kimchi. Ingredients

  • 450 grams udon noodles
  • 1 tbsp neutral cooking oil generic cooking oil
  • 300 grams pork pork shoulder, pork belly, ground pork, or bacon, diced
  • 1 tsp salt
  • 1 small yellow onion sliced
  • 1 cup kimchi chopped
  • 2 tbsp kimchi juice
  • 1 tbsp gochugaru
  • 1 tbsp gochujang
  • 1 tbsp soy sauce low sodium
  • ½ tbsp white sugar
  • 3 tbsp water
  • 1 tbsp sesame oil

Instructions

  1. Cook the udon according to the direction on the packaging, drain, and set aside until ready to use.
  2. In a large skillet, heat up oil over medium heat, before adding the pork with a pinch of salt.
  3. Saute until the a bit more than half way browned before adding the sliced onions. Continue to cook for 2 to 3 minutes before adding the kimchi.
  4. Cook for another 2 to 3 minutes before adding the kimchi juice, gochugaru, gochujang, soy sauce, and sugar. Continue to saute until everything is well combined.
  5. Add around 3 tablespoons of water to the skillet and let simmer for 1 to 2 minutes.
  6. Add the cooked udon to the skillet and toss to combine.
  7. Finish off with a drizzle of sesame oil and serve as is or with a fried egg.
