  • 1 cup vegan butter
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 ½ teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 ¼ cup all-purpose flour
  • ½ teaspoon salt
  • 2 cups of your favorite mix-ins (chopped walnuts, vegan chocolate chips, raisins, seeds, coconut shreds, etc.)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C) and line a baking sheet with a silicone mat or parchment paper.
  2. In a large bowl, beat together both sugars and the vegan butter.
  3. Prepare the Neat Egg according to package instructions. Set aside.
  4. Mix in the vanilla, Neat Egg, baking soda, flour, and salt. Stir in your preferred mix-ins.
  5. Scoop dough onto a lightly oiled baking sheet by the tablespoon. Flatten each ball very slightly with the top of your spatula. 
  6. Bake for 10 minutes and allow to cool before eating.

Notes

  • Properly measure flour by fluffing and leveling to avoid dense cookies.
  • Avoid over-mixing dough to maintain a tender texture and proper spread.
  • Press extra toppings onto cookie dough balls before baking for a decorative finish.
