Kofta Kebab Recipe (Video Tutorial)

Kofta Kebab combines ground beef with grated onion, soaked stale bread, fresh parsley, and a warm mix of spices including cumin, coriander, cinnamon, and dried mint. After resting the mixture chilled, it is formed into patties and seared in a pan or grilled, producing flavorful, aromatic kebabs commonly served with pita and yogurt sauce.

Description

The Kofta Kebab recipe starts by grating a large yellow onion and squeezing out its juice to soak stale bread, which adds moistness and tender texture to the ground beef. Mixing in chopped parsley and a blend of spices—cumin, coriander, cinnamon, and dried mint—gives the meat mixture a distinctively savory and slightly sweet aroma typical of Middle Eastern cuisine.

After chilling, the mixture is shaped into patties and cooked either on a pan with olive oil or grilled until evenly browned. The kebabs have a flavorful crust and a juicy interior. Serving with warm pita bread, yogurt sauce, and fresh vegetables like tomato, onion, and cucumber complements the rich meat and spices.

For convenience, these kebabs can be baked in the oven or grilled. Using gluten-free bread adapts the recipe for dietary needs. The method preserves moisture and balances spices for an authentic, well-rounded kebab experience.

Ingredients

Servings
  • 1 yellow onion large
  • 1 lice bread stale
  • 2 lb ground beef
  • 1/4 cup parsley chopped, fresh
  • 1 tsp cumin
  • 1 tsp Coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon
  • 1 tsp dried mint
  • 2 tbsp olive oil

Instructions

  1. Peel the onion and grate it in a bowl.
  2. Squeeze the onion completely and save the juice. Place the squeezed onion in a large bowl.
  3. Soak the bread in the onion juice for about 10 minutes.
  4. To the grated onion, add ground beef, chopped parsley, cumin, coriander, salt, pepper, cinnamon and dried mint. Mix well to make sure all the ingredients are well mixed.
  5. Add in the soaked bread and mix well. Knead the meat mixture using your hands.
  6. Cover the bowl with a plastic wrap and place the bowl in the fridge for 30 minutes to 1 hour.
  7. Heat the olive oil in a pan over medium heat.
  8. Form the meat mixture into patties and sear in the pan for about 4-5 minutes on each side.
  9. Serve with warm pita, yogurt sauce, fresh tomatoes, onion and cucumbers.

Notes

  • Use gluten-free bread to make the recipe suitable for gluten-free diets.
  • For grilling, preheat the grill and brush with olive oil before cooking the kebabs.
  • Oven-bake at 400ºF for 18 to 20 minutes, flipping halfway for even cooking if pan-searing is not preferred.
  • Mixing lamb and beef or using either meat alone works well based on preference.
  • Serve kofta kebabs with warm pita, yogurt sauce, and fresh vegetables like tomatoes, onions, and cucumbers.
