Korean Beef

Korean Beef features quick stir-fried top sirloin strips coated in a sauce of soy, honey, and cornstarch, with fresh garlic and ginger adding aromatic depth. The sauce thickens around the beef, creating a lightly sweet, savory, and mildly spicy dish that finishes with sesame oil, green onions, and sesame seeds for extra flavor and texture. It’s a straightforward recipe ideal for a satisfying meal that can be served quickly after cooking.

Description

Korean Beef employs lean top sirloin sliced into strips and stir-fried in avocado oil to develop a browned exterior. Fresh garlic and ginger are added briefly to release their pungent aromas without overpowering the beef. Meanwhile, a sauce made from soy sauce, honey, cornstarch, and red pepper flakes is prepared and added to the pan, thickening to a glaze-like consistency that coats each piece of beef evenly.

The dish gains finishing touches with sliced green onions and sesame seeds, contributing a mild crunch and fresh flavor, and a drizzle of sesame oil adds distinctive aroma and richness. This balance of sweet, salty, spicy, and umami flavors makes Korean Beef a satisfying entrée best served with rice or vegetables.

Using top sirloin ensures tenderness without needing to marinate, and leftovers keep well refrigerated for several days, with gentle reheating recommended to maintain texture.

Ingredients

Servings

Sauce:

  • cup soy sauce or a gluten-free alternative, reduced sodium
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • ½ teaspoon crushed red pepper

Stir-fry:

  • 2 tablespoons avocado oil
  • 2 pounds sirloin steak cut into strips, top
  • 1 tablespoon garlic minced, fresh
  • 1 tablespoon ginger root minced, fresh

Topping:

  • ¼ cup green onions green parts only, thinly sliced
  • 1 teaspoon sesame seeds
  • 1 tablespoon sesame oil

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, cornstarch, and red pepper flakes. Set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the sliced beef. Stir-fry the beef until browned, about 3-4 minutes.
  3. Add the garlic and ginger and cook, stirring, for 1 more minute.
  4. Remix the soy sauce mixture and add it to the skillet. Reduce the heat to medium and stir-fry until the beef is well coated and the sauce has thickened, for about 2 minutes.
  5. Turn the heat off. Spoon the meat and pan juices into plates or bowls. Top with the green onions and sesame seeds, drizzle with the sesame oil and serve.

Notes

  • Pre-sliced top sirloin suitable for stir-fry simplifies preparation but slicing your own is fine.
  • Ensure using top sirloin, not bottom sirloin, to avoid toughness.
  • Store leftovers in a sealed container in the refrigerator for up to 3-4 days.
  • Reheat leftovers covered in the microwave at 50% power to preserve tenderness.
