Description
Korean Beef Bulgogi uses thin slices of boneless ribeye steak cut against the grain to ensure tenderness. A marinade combines soy sauce, brown sugar, sesame oil, pressed garlic, grated pear, grated fresh ginger, and gochujang (Korean red pepper paste) that imparts sweetness, umami, and mild heat. The meat soaks in this marinade for at least two hours in the refrigerator to absorb flavor.
Cooking is done over high heat in a cast iron pan, searing the beef quickly in batches so it retains juiciness and develops caramelized edges. The beef is cooked in a single layer to promote even browning. Afterwards, the dish is garnished with sliced green onions and toasted sesame seeds to add freshness and a nutty crunch.

Ingredients
- 2 lbs ribeye steak boneless, beef
- 1/4 cup green onions sliced
- 1 tbsp sesame seeds
- 2 tbsp neutral cooking oil canola, olive or vegetable, generic cooking oil
Bulgogi Sauce
- 1/3 cup soy sauce low-sodium
- 2 tbsp brown sugar
- 3 tbsp sesame oil
- 3 garlic pressed, cloves
- 1/2 pear grated
- 2 tbsp ginger grated, fresh
- 1 tbsp gochujang Korean red pepper paste

Beef
- Slice beef against the grain into thin slices (about 1/4-inch thick).
- Place the beef into a large resealable plastic storage bag. Set aside.
Bulgogi Sauce
- In a medium bowl, whisk the soy sauce, brown sugar, sesame oil, pressed garlic, grated pear, grated ginger, and gochujang together.
- Pour the sauce into the beef bag and massage the marinade into the beef from the outside. Allow it to marinate in the fridge for at least 2 hours.
- Preheat a cast-iron over high heat. Cook the beef in single layer batches.
- Garnish with a sprinkle of sesame seeds and chopped green onions. Enjoy!
