Korean Beef Tacos
Description
The recipe starts by blending a sauce of brown sugar, reduced sodium soy sauce, sesame oil, crushed red pepper flakes, and ground ginger. Ground beef is browned with garlic, then combined with this sauce to create a sweet, savory, and mildly spicy filling. Kimchi is caramelized separately with sesame oil and sugar to enhance its flavor and texture.
Mini flour tortillas contain portions of the beef and kimchi, topped with diced red onion, fresh cilantro leaves, and toasted sesame seeds. A simple Sriracha mayonnaise made with mayonnaise, sriracha, and lime juice drizzled over adds creaminess and tang with a spicy kick.
This assembly offers a fusion of Korean-inspired marinade and classic taco elements, balancing rich, tangy, spicy, and fresh notes. It makes for flavorful, easy-to-eat appetizers or meal components suited for gatherings.
