Korean Grilled Shrimp Skewers

Korean Grilled Shrimp Skewers feature shrimp marinated in a blend of olive oil, tamari, honey, gochujang, lemon juice, garlic, and optional red pepper flakes, then grilled or air-fried until opaque and lightly charred. The marinade balances sweet, savory, and spicy flavors lending a sticky glaze. The shrimp cook quickly, and the skewers provide convenient serving portions.

Description

This recipe prepares shrimp by marinating them in a mixture of olive oil, tamari soy sauce, honey, Korean gochujang paste, lemon juice, and garlic, with optional red pepper flakes for heat. Marinating from 30 minutes up to two hours allows flavors to penetrate the shrimp. The shrimp are then threaded onto soaked bamboo skewers for grilling or air frying to ensure even cooking and to prevent burning.

Cooking uses direct high heat on a grill, broiler, or air fryer, where shrimp cook for only a few minutes per side until their flesh turns opaque and gains light charring. The gochujang and honey create a glossy, mildly spicy coating while lemon juice adds brightness. Using larger shrimp helps keep them from falling between grill grates, and oiling the grill prevents sticking.

Serving options include enjoying the skewers as appetizers or part of a main meal, with the sweetness and heat characteristic of Korean-style barbecue. Metal or flat skewers can improve heat conduction and help keep shrimp stable during cooking.

For air frying, preheat to 350°F and cook the skewers 5-8 minutes, turning halfway through for even cooking. Adjust time based on air fryer performance. Marinating longer intensifies flavor, and using grill plates or flat skewers helps shrimp cook evenly without twisting.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 2 tablespoons tamari soy sauce or regular soy
  • 2 tablespoons honey
  • 2 tablespoons Korean Gochujang
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic minced
  • red pepper flakes optional, to taste
  • 2 pounds Shrimp peeled and cleaned, tails still on, 907g

Instructions

  1. Soak bamboo skewers in water for 30 minutes before using.
  2. Mix together olive oil, soy sauce, honey, Korean Gochujang, lemon juice, garlic and red pepper flakes if using, in a mixing bowl.
  3. Add the shrimp to the bowl and mix until coated.
  4. You can cook straight away or leave to marinate the shrimp. If marinating, marinate for 30 minutes up to 2 hours ahead. Thread about 5 shrimp to each skewer.
  5. Preheat the grill (or charcoal grill), broiler or grill pan to medium heat, oil the grates and grill the shrimp for 2-3 minutes per side or until opaque.
  6. Transfer skewers to a plate and serve.

Make In the Air Fryer

  1. Create the skewers like you did in the instructions above using steps 1-4.
  2. Preheat Air Fryer to 350 degrees F / 180 degrees C. Place shrimp in the Air Fryer, making sure the skewers don’t touch.
  3. Cook for 5-8 minutes, turning skewers halfway through the cook time. Since air fryer temperatures can vary, start with less time and then add more as needed.

Notes

  • Marinate shrimp for 30 minutes up to 2 hours to enhance flavor.
  • Use larger shrimp to avoid them slipping through grill grates and to ensure even cooking.
  • Oil grill grates well to prevent shrimp from sticking or burning.
  • Flat or metal skewers are ideal to keep shrimp stable and promote even heat transfer while cooking.
  • If short on time, it's fine to skip soaking the shrimp before marinating.
  • Cooking times may vary by air fryer; start with shorter cooking and add more time as needed.
