Description
These cupcakes combine eggs, sugar, flour, baking powder, softened butter, yogurt, and finely pureed kumquats to create a moist, tender cake with a distinctive citrus flavor from the kumquats. The kumquats, peeled and deseeded before pureeing, contribute a unique zing and slight texture variation throughout the batter.
The cupcakes bake for 20-25 minutes at moderate heat, yielding a golden-baked texture that is soft and flavorful. While baking, the batter rises due to the baking powder, creating a light crumb suitable for cupcakes.
The accompanying orange glaze is prepared by simmering organic orange juice with sugar until syrupy, then applied over the cooled cupcakes, enhancing their citrus notes and adding a gentle sweetness and glossy finish.
These cupcakes can also be baked in larger pans like an 8-inch springform or loaf tin, with a longer baking time around an hour. Using organic fruit helps retain a fresh and pure citrus flavor.
Ingredients
Cupcakes
- 3 egg
- 1 ⅛ cup sugar
- 1 ¾ cup all-purpose flour
- 2 ½ tsp baking powder or 1 packet Italian Pane Degli Angeli vanilla baking powder
- ⅓ cup butter softened
- ⅓ cup yogurt plain, Greek
- 1 ¼ cup Kumquat washed, cut in half with the seeds removed
Glaze
- orange organic, juice from 1 orange
- ¼ cup sugar
Instructions
Whole orange cake:
- Preheat oven to 350°F (175°C)
- Place cupcake liners into a cupcake pan or two (18).
- Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy.
- Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
- In a food processor or blender, process the kumquats until almost pureed.
- Add the processed kumquats to the cake mixture and stir until evenly combined. Fill the cupcake liners about ⅔ full.
- Place tray(s) in middle of the oven for 20-25 minutes or until done. Remove from the oven.
Orange glaze:
- Prepare the glaze by melting the sugar in the orange juice and allow to simmer for a few minutes, just until the liquid has a syrupy consistency.
- Spoon or brush over the top of the cupcakes and allow to cool completely before eating.
Notes
- Use organic kumquats and oranges for better flavor in cupcake and glaze.
- The batter can be baked in an 8" springform or loaf pan; adjust baking time to about 1 hour.
