Kung Pao Chicken

Ingredients

Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 2 teaspoons sesame oil
  • 2 teaspoons cornstarch

Stir Fry

  • 1 pound chicken breast cut into bite size chunks, boneless skinless
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 2 tablespoons vegetable oil
  • 1/2 cup peanuts roasted
  • 3 teaspoons garlic minced
  • 2 teaspoons ginger grated
  • 8 small dried Sichuan chiles rehydrated, or dried arbol chiles
  • 1/4 cup green onion sliced

Instructions

  1. In a small mixing bowl, whisk together 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon granulated sugar, 2 teaspoons sesame oil, and 2 teaspoons cornstarch. Set aside.
  2. Cut 1 pound boneless skinless chicken breasts into bite-size pieces. Dice 1 medium red bell pepper and 1 medium green bell pepper into 1 to 1 1/2-inch pieces.
  3. Heat a wok or large skillet over high heat. Add 2 tablespoons vegetable oil and heat for 1 minute. Add the diced chicken and cook, stirring frequently, until seared on the outside, about 3 to 4 minutes.
  4. Add the diced bell peppers and the prepared sauce. Stir-fry for 3 to 4 minutes, until the bell peppers are tender-crisp and the chicken is cooked through.
  5. Stir in 1/2 cup roasted peanuts, 3 teaspoons minced garlic, 2 teaspoons grated ginger, and 8 small dried Sichuan chiles. Cook for an additional 1 to 2 minutes, stirring constantly.
  6. Serve hot and garnish with 1/4 cup sliced green onion.

Notes

  • Serve plain or on top of steamed white rice.
  • Instead of leaving the chilis whole, you can also snip them into 1/4 to 1/2-inch segments.
