Kuru Köfte Meatballs
Description
Kuru Köfte Meatballs are a traditional combination of equal parts ground lamb and ground beef mixed with grated onions and bread soaked in water to maintain moisture and tenderness. Adding flour and spices such as cumin, salt, and freshly ground black pepper binds the mixture and imparts warm, earthy flavors. After combining all ingredients thoroughly, the mixture is shaped into egg-sized portions, formed either as round balls or finger-like shapes for texture variation. Each piece is then lightly coated in flour, which helps develop a delicate crust during frying.
The meatballs are pan-fried using butter and olive oil together; butter adds richness and flavor, while olive oil prevents the butter from burning at medium heat. The frying process typically takes about 4-5 minutes per side, cooking the meatballs until golden brown and cooked through while retaining juiciness inside. This method produces a pleasing contrast between the crisp outer layer and tender interior.
Kuru Köfte are often served with fresh salad, bread, and a side of plain yogurt which complements their spiced meatiness with refreshing elements. They can also be grilled or barbecued as alternate preparation methods that add smoky notes.

Ingredients
- 1 kg ground lamb approx. 1 lb
- 1 kg ground beef approx. 1 lb
- 2 small onion grated
- 2 lices bread (without crust)
- 120 g flour 1 cup
- 1 tablespoon cumin ground
- 2 medium egg
- 230 ml water 1 cup
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- 2 tablespoons butter for frying
- 2 tablespoons olive oil for frying
Instructions
- Soak 2 slices bread in 230 ml water then remove and gently squeeze to remove the excess liquid.
- In a large mixing bowl, combine the bread, 2 medium eggs, 1 teaspoon salt and ½ teaspoon black pepper, 1 tablespoon ground cumin, 2 small onions and 1 kg ground lamb , 1 kg ground beef , 120 g flour and mix well till properly combined.
- Taking an egg size amount of the mixture at a time, shape into small round patties or finger like shapes.
- Lightly press the köfte in flour and fry on medium heat in 2 tablespoons butter and 2 tablespoons olive oil for 4 or 5 minutes, till golden brown.
Notes
- Use butter for frying the meatballs to enhance flavor, adding olive oil to prevent the butter from burning.
- These meatballs can also be grilled or barbecued if preferred.
- Serve with salad, bread, and plain yogurt for a complete meal.
