Description
This recipe begins on the stovetop by gently melting together butter, light brown sugar, corn syrup, Cointreau, and orange extract, infusing the mixture with citrus notes. The flour and finely chopped orange zest are stirred in to create a batter that spreads thinly when spooned onto parchment-lined baking sheets. Baking at 350°F yields golden edges and bubbly, lacy textures distinctive of this cookie style.
Cooling on the baking sheet allows cookies to firm before transferring to wire racks. Chocolate morsels melted separately serve as a finishing touch either drizzled over the cookies or used for dipping. The dough is versatile enough that cookies can be shaped into curls around a wooden spoon handle shortly after baking while still pliable, adding an elegant presentation option.
The presence of Cointreau offers a fragrant orange essence with the alcohol baking off for adult flavor nuances. Alternatives include other orange liqueurs or extracts as substitutes. Using a Ziploc bag with a small cut tip is convenient for chocolate drizzle application.
Ingredients
- ¼ cup light brown sugar tightly packed
- ¼ cup butter salted
- ¼ cup light corn syrup
- 1 TB Cointreau
- ½ tsp orange extract
- ½ cup + 2TB all-purpose flour
- 1 TB orange zest finely chopped
- 4-6 oz semi-sweet chocolate morsels for drizzling
Instructions
- Preheat oven to 350F, and place rack on the lower middle position. Line baking sheets with parchment paper. Set aside.
- In a small, heavy saucepan over low heat, add the sugar, butter, corn syrup, Cointreau, and orange extract. Cook until the butter melts, stirring frequently. Remove the saucepan from the heat, and add the flour and orange zest. Stir again until the ingredients are well-combined
- Drop heaping teaspoons of batter onto the prepared baking sheets leaving 2 ½ inches between each cookie.
- Bake 11-13 minutes or until the cookies have spread out, bubble up, and become golden brown. Be careful not to burn!
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Continue baking in batches, if needed, until all the batter has been used.
- Once all of the cookies have cooled, add the chocolate morsels to a microwave-safe bowl. Heat in 20-second intervals, stirring in between. Drizzle the chocolate onto the cookies, and cool completely.
Notes
- Cointreau adds orange aroma; alcohol cooks off during baking leaving orange essence. Substitute with other orange liqueur or 1 tsp each orange and vanilla extracts if desired.
- For easy chocolate drizzle, melt chocolate in microwave at 20-second intervals stirring each time, then pipe from a small corner cut in a Ziploc bag.
- Alternatively, dip cookies halfway into melted chocolate instead of drizzling for a different presentation.
- To shape cookie curls, cool cookies for 1-2 minutes until pliable, then wrap around a wooden spoon handle and let cool fully to set.
