ladies finger fry

This ladies finger fry recipe creates tender, spiced okra slices cooked without water to avoid sliminess. The okra is sautéed with a fragrant masala of turmeric, Kashmiri red chili, coriander powder, ginger, green chili, and onions, resulting in a dry and flavorful side dish. The technique keeps the okra crisp-tender with balanced heat and aroma from the spices.

Description

The preparation involves washing and drying fresh okra thoroughly to prevent sliminess, then cutting into 1 to 1.5 cm slices. In a pan, oil is heated and onions sautéed till translucent before adding ginger and green chili for a fresh, spicy base. Ground spices—turmeric, Kashmiri red chili powder, coriander powder, and garam masala—are added next and cooked gently to release their flavors. Then the okra is added and tossed well with the masala and salt. The pan is covered and cooked on low heat without adding water, allowing the okra to cook in its own moisture and oils, resulting in a crisp yet tender texture. Fresh chopped coriander leaves finish the dish.

This fry pairs well as a side with Indian meals and can be doubled for larger servings. Using tender, fresh okra pods and adjusting spices provides flexibility in heat and flavor.
