Lamb

  • 2-3 pounds lamb chops bone in
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste

Mint and Garlic Sauce

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 tablespoon rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon red chili flakes
  • 2 tablespoons mint chopped

Instructions

  1. Prep grill and lamb: Heat a grill pan over high heat until almost smoking. Generously season lamb chops with salt and pepper on both sides.
  2. Make sauce: Meanwhile combine all the sauce ingredients together in a bowl and whisk well. Set aside.
  3. Grill: Spray the grill pan with a bit of cooking spray or brush with olive oil. Add the chops to the hot grill pan and sear for 2 minutes, flip them over and cook for another 2½ minutes for medium-rare or 3½ minutes for medium.
  4. Serve: Generously drizzle each chop with some garlic and mint sauce over it to serve.

Notes

  • Transfer the lamb to an airtight container and it will keep, in the fridge, up to 3 days. You can also store leftovers in the freezer for 2-3 months. However you store it, make sure the meat has cooled down to room temperature first.
