Baby Lamb Chops with Yogurt Mint Sauce

My kids adored this recipe! I think it's a great way to introduce a food you might not be familiar with.

Ingredients
- 1 Cup yogurt
- 2 tablespoons fresh mint, chopped
- pinch of kosher salt
- 1 tablespoon lime juice
- 1 small garlic clove, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1 tablespoon vegetable or canola oil
- 1 1/2 pounds Individual Baby Lamb Chops (cut into single chops)
- 2 teaspoons kosher salt
Instructions
- Place the first 7 ingredients in a bowl, stir to combine and set aside.
- Season the lamb chops with salt on both sides.
- Heat 1 tbsp of oil in an ovenproof large sauté pan over medium-high heat and cook lamb chops for 4 minutes on each side (for medium to medium rare).
- Allow the lamb to rest for 5 minutes.
- Serve with sauce.
