Ingredients

Servings

For the Lamb Chops:

  • 8 lamb rib chops or 4 loin chops, about 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary or 1 tablespoon fresh, chopped, dried
  • 1 teaspoon thyme or 1 tablespoon fresh, chopped, dried

For the Mint Sauce:

  • 1 cup mint leaf chopped, fresh
  • ¼ cup white vinegar or apple cider vinegar
  • 2 tablespoons sugar or honey
  • ¼ teaspoon salt
  • ¼ cup water boiling

Instructions

Step No.1: Marinate the Lamb Chops

  1. Pat the lamb chops dry with paper towels. In a small bowl, mix olive oil, salt, pepper, garlic powder, rosemary, and thyme. Rub this mixture evenly over the lamb chops. Let them marinate for at least 15-30 minutes at room temperature or up to overnight in the fridge for deeper flavor.

Step No.2: Make the Mint Sauce

  1. In a bowl, combine chopped mint, vinegar, sugar, and salt. Pour boiling water over the mixture and stir until the sugar dissolves. Let the sauce sit for at least 10 minutes before serving to allow the flavors to meld.

Step No.3: Cook the Lamb Chops

  1. Heat a cast iron skillet or grill pan over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or cook longer to your desired doneness. Let them rest for 5 minutes before serving.

Step No.4: Serve and Enjoy

  1. Serve the lamb chops warm with the mint sauce drizzled on top or served on the side. Enjoy with roasted vegetables, mashed potatoes, or a fresh salad.

Notes

  • Choosing Lamb: Rib chops are more tender and flavorful, while loin chops are meatier and leaner.
  • Marinate Longer: For extra tenderness, marinate overnight in the refrigerator.
  • Checking Doneness: Use a meat thermometer: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, 145°F (63°C) for medium.
  • Garlic Butter Lamb Chops: Swap mint sauce for a buttery garlic and herb sauce.
  • Spicy Lamb Chops: Add chili flakes or cayenne pepper to the seasoning for extra heat.
  • Balsamic Mint Sauce: Replace vinegar with balsamic vinegar for a richer, deeper flavor.
  • Honey Mint Glaze: Add honey to the mint sauce for a sweet and tangy twist.
