Latin style rice with chicken or turkey, also called Arroz con pollo o pavo, is a comforting dish where cooked shredded turkey or chicken mixes with fluffy rice and a medley of vegetables including diced bell peppers, peas, and carrots. The dish is flavored with a blend of spices like annatto powder, cumin, paprika, oregano, and garlic, producing a warm and complex seasoning profile that colors the rice and adds mild heat and earthiness.
The preparation begins by sautéing onions, garlic, bell peppers, and spices until softened and aromatic. Tomatoes are added next, providing moisture and a subtle acidity. Cooked peas, carrots, and shredded poultry are then folded in, followed by the rice seasoned with soy sauce and broth to adjust moisture and richness. The mixture is gently cooked to blend the flavors and reheat all components evenly. Lastly, fresh cilantro or parsley imparts a bright herbal note.

Ingredients
- 4 cups turkey shredded, cooked, or chicken
- 6-7 cups rice from about 2 cups of uncooked rice, cooked
- 3 tablespoons olive oil or butter
- 1 yellow onion diced
- 6 garlic crushed, cloves
- 2 bell pepper 1 red and 1 green, diced
- 2 teaspoons annatto powder or achiote
- 1 tablespoon ground cumin
- ½ teaspoon cayenne pepper adjust to taste, to 1 teaspoon or chili powder
- 2 teaspoons paprika
- 1 tablespoon oregano dry
- 14.5 ounce can diced tomatoes or fresh tomatoes (peeled and diced
- 10 ounces of peas cooked
- 2 carrot diced (1 cup or about 10oz, cooked
- ½ to 1 cup chicken broth adjust based on desired consistency of rice, or turkey broth
- 4 tablespoons soy sauce
- 2 tablespoons cilantro can also use parsley, finely chopped
Suggested side dishes:
- plantains fried, ripe
- Side salad
- avocado lime slices, and hot sauce to taste, slices
Instructions
- In a large sauté pan or frying pan, heat the olive oil over medium low heat and add the onions, garlic, bell peppers, achiote, cumin, chili powder, paprika, and oregano, cook for about 5-7 minutes or until the onions and peppers are soft.
- Add the tomatoes, mix well and cook for another 5 minutes.
- Add the cooked peas, carrots, and shredded turkey or chicken. Mix well and cook for a few minutes.
- Add the cooked rice, soy sauce, and turkey or chicken broth to taste. Stir well and cook for about 5-10 minutes. Taste and add salt and additional seasoning to taste.
- Stir in the finely chopped cilantro or parsley, and serve with fried ripe plantains, avocado slices and/or side salad.
