Lazy Enchiladas
Description
Lazy Enchiladas layer frozen taquitos in a shallow baking dish coated with a thin base of enchilada sauce, then cover the taquitos with more sauce. Baking at a high temperature softens the taquitos and warms the sauce until bubbling. Sprinkling shredded cheddar cheese on top near the end of baking creates a melted, creamy topping. Optional garnishes including sliced avocado, sour cream, diced onion, and cilantro provide contrast in texture and temperature, cutting through the richness of the dish.
The recipe allows flexibility with sauce and taquito types; mixing red or green sauces with different fillings can adjust flavors as desired. This helps repurpose frozen taquitos into a baked casserole-like meal without complicated preparation.
Serve this dish as a casual dinner or weekend meal where convenience is important but flavor and texture are enhanced. The combination of crispy edges softened by sauce and cheesy topping makes it satisfying. The fresh garnishes add brightness and a cooling element.
Using your preferred taquito and enchilada sauce varieties allows customization. Try chicken with red sauce or beef with green sauce as suggested. Toppings are optional but help balance richness and add freshness.
Ingredients
- 10 ounces enchilada sauce red or green, canned
- 18 Taquitos any variety, frozen

- avocado for serving, sliced avocado, diced onion
- sour cream
- onion

Instructions
- Preheat oven to 400 degrees.
- Pour about ¼ cup of the enchilada sauce in the bottom of a 9x13 baking dish. You’ll need just enough to thinly cover the bottom.
- Arrange the taquitos in an even layer in the dish. Pour the remaining enchilada sauce over the top.
- Bake for 15 minutes, until the taquitos are cooked through and the sauce is hot and bubbly.
- Sprinkle the cheese over the top and continue baking for 5 minutes to melt the cheese.
- Serve topped with sliced avocado, sour cream, diced onion, and cilantro as desired.
Notes
- Choose any preferred combination of enchilada sauce (red or green) and taquito flavors to suit your taste or what you have on hand.
- Optional toppings like avocado, sour cream, onion, and cilantro enhance the dish's texture and flavor but can be omitted for a simpler meal.
- Be sure to use a 9x13 inch baking dish for even cooking and proper layering of ingredients.
