Description

This peach cobbler recipe uses melted butter as a base with a batter made from flour, sugar, baking powder, nutmeg, milk, and vanilla poured over it, creating a soft crust once baked. Sliced peaches are layered on top of the batter, and a cinnamon-sugar mixture is sprinkled over the peaches before baking. The peach juices bake through the batter, producing a moist, tender texture harmonizing with the buttery top crust. The nutmeg adds warmth and subtle spice to the dish.

The cobbler is baked for 45-50 minutes until set and golden on top. It can be served warm or at room temperature, commonly accompanied by vanilla ice cream or toasted almond slices for added texture.   • 8 tablespoon butter or 1 stick, melted. You can try vegan butter or coconut oil as a dairy-free alternative, unsalted
  • 1 cup all-purpose flour substitute regular flour with gluten-free flour
  • 1 ⅓ cups granulated sugar divided - Cane sugar or coconut sugar also works.
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon ground nutmeg You can also replace nutmeg with allspice or cinnamon.
  • ¾ cup milk or half-and-half - Or, try almond or oat milk, whole
  • 1 teaspoon vanilla extract or brandy or almond extract, my favorite (the latter makes this dessert much more delicious!, pure
  • 29 ounce peaches in heavy or light syrup, drained - For a variation, try other canned fruits like cherries or apples, canned, sliced
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. Pour melted butter into a 9 x 9-inch pan or baking dish. Reserve! TIP: Avoid using a smaller pan because it will take much longer to bake. Prefer baking pans or baking dishes that are wide rather than too deep!
  3. In a medium bowl, combine together flour, 1 cup sugar, baking powder, nutmeg, milk, and vanilla extract, whisking until forming a homogeneous, smooth mixture.
  4. Spoon the flour mixture evenly into the melted butter, but do NOT stir! Then, distribute the sliced peaches on top. Again, do NOT stir!
  5. Mix the remaining ⅓ cup of sugar with the cinnamon and sprinkle the sugar mixture evenly on top of the peaches. Do NOT stir!
  6. Bake this poor man's peach cobbler for 45-50 minutes or until set on top. Enjoy warm or at room temperature with your favorite vanilla ice cream. I enjoy mine with some toasted almond slices on top for a crunch!

Notes

  • Store leftovers in an airtight container in the fridge for up to 3-4 days.
  • Freeze cooled cobbler up to 2 months; thaw and reheat before serving though crust may soften.
  • Reheat covered portions in microwave or oven preheated to 350°F for 10-15 minutes.
  • Can be baked ahead, cooled, stored in fridge for up to 2 days, and reheated; do not store unbaked batter in fridge.
