Lazy No Bake Thin Mints are chocolate wafers coated with melted semi-sweet chocolate flavored with peppermint extract, then cooled until firm. The result is a smooth, minty chocolate treat made without baking, featuring crisp cookies enveloped in glossy peppermint-chocolate coating.

Description

Start by lining a baking sheet with parchment or waxed paper to ease cleanup and prevent sticking. Chop semi-sweet baking chocolate into small pieces for uniform melting. Microwave the chocolate in bursts until mostly melted, stirring between intervals to achieve a smooth texture without overheating.

Stir in peppermint extract carefully, starting with a small amount to control the mint flavor strength. Each chocolate wafer cookie is dipped gently into the peppermint-chocolate mixture, coating both sides evenly. Excess chocolate is allowed to drip off before placing cookies on the prepared sheet.

Let the coated cookies set at room temperature until firm, then store them in the refrigerator to maintain crispness and preserve the minty chocolate coating. This no bake method is straightforward and results in a pleasant mint-chocolate snack.

  • 15 chocolate wafers Nabisco Famous brand
  • 8 oz semi-sweet baking chocolate 8 squares, Baker's brand
  • 1/4-1/2 tsp peppermint oil or extract

Instructions

  1. Line a baking sheet with parchment or waxed paper.
  2. Chop the chocolate into small pieces
  3. Put the chocolate into a small microwave safe bowl. I like to use a 4 cup glass measuring cup because it is a good shape for dipping the cookies.
  4. Microwave on high for 60 seconds. Stir the chocolate and microwave again in 15 second bursts, stirring in between, just until most of the chocolate is melted. Remaining lumps will melt as you stir. Don't overheat the chocolate.
  5. Stir in the peppermint extract. Start with 1/4 teaspoon and taste it. Add a touch more if you like.
  6. Using a fork, dip the cookies very gently in the chocolate to coat on both sides. Let the excess chocolate drip off before setting the cookies down on the baking sheet.
  7. Let set at room temperature, and then store in the refrigerator.
