Lebanese Potato Salad Recipe

This Lebanese Potato Salad is a refreshing blend of tender potatoes, zesty lemon, and fresh mint, bringing bright, satisfying flavors to any meal.

Ingredients

  • 1 pound russet potato quartered
  • 1/8 cup lemon juice freshly squeezed
  • 1 clove garlic pressed
  • 4 teaspoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 2 scallions thinly sliced
  • 1/8 cup mint chopped, fresh

Instructions

  1. Bring a large pot of salted water to a boil over medium-high heat. Boil potatoes for 15-20 minutes, or until fork-tender. Drain and set aside to cool for 20 minutes.
  2. Once cooled, cut the potatoes into bite-sized pieces and place them in a serving bowl.
  3. In a small bowl, whisk together the lemon juice, garlic, olive oil, salt, and pepper. Pour over the potatoes.
  4. Fold in the scallions and fresh mint. Serve at room temperature.
