Lebanese Rice Bowls with Hummus

Ingredients
- 4 instant rice such as white rice, jasmine or basmati, Minute Rice Cups
- ½ cup hummus (store-bought or homemade )
- 1 cup Yogurt sauce Lebanese cucumber style
- 2 cups ground beef seasoned
- 1 cup tomato salad
- 1 cup za'atar salad
- pickled turnips optional garnish, thinly sliced, minced, toasted
- red onion
- parsley
- pine nuts
Lebanese Laban Cucumber Yogurt Sauce
- ¾ cup PLAIN yogurt
- ¼ cup cucumber (minced)
- ½ teaspoon dried mint
- 1 tablespoon lemon juice
- 1 clove garlic (minced)
- salt to taste
- black pepper to taste
Za'atar Tomato Salad
- 1 medium tomato (diced)
- 1 tablespoon parsley (minced)
- 1 teaspoon za'atar spice blend
- 1 teaspoon olive oil
- salt to taste
- black pepper to taste
Seasoned Ground Beef
- 1 tablespoon clarified butter
- 1 pound ground sirloin
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon allspice
- salt to taste
- black pepper to taste
Instructions
- Before you being assembling your rice bowls, prepare all of the components. To prepare the cucumber yogurt sauce, simply mix all ingredients in a small bowl (yogurt through salt and pepper) then mix well. Check for seasoning and adjust accordingly; set aside.
- Next, mix together the za'atar tomato salad in a small bowl. Check for seasoning and adjust accordingly; set aside.
- If you're making homemade hummus, follow this recipe otherwise, feel free to use store-bought.
- When you're ready to cook the seasoned beef, melt the clarified butter over a medium skillet over medium-high heat. Add the ground sirloin then season with cinnamon, nutmeg, all spice salt and pepper. Using a wooden spoon or potato masher, carefully break down the meat in to bite-sized pieces. Continue browning until fully cooked, about 8-10 minutes; set aside.
- To assemble the bowls, follow the Minute Rice Cups package instructions to cook properly. Place four bowls out and fill each bowl with one cup of Minute Rice. Next, top each cup with equal parts of the seasoned ground beef. Next, dollop a couple tablespoons of hummus and cucumber yogurt sauce in each bowl. Lastly, scoop on a bit of the za'atar tomato salad and garnish with pickled turnips, red onions, minced parley and toasted pine nuts if you wish. Enjoy warm!
