Lechon Kawali is a Filipino dish consisting of boiled pork belly that is dried and then deep-fried to develop a crispy skin and tender meat. Description

This recipe starts by boiling pork belly with salt, whole peppercorns, bay leaves, crushed garlic, soy sauce, and water until the pork is tender enough to be pierced easily with a fork. After boiling, the pork is drained and rubbed with a generous amount of salt, then placed uncovered in the refrigerator overnight to dry the skin, a crucial step for achieving crispiness upon frying.

Once dried, the pork belly is cut into roughly one-inch cubes. Neutral cooking oil is heated in a wok or pot to medium-high temperature. The pork chunks are fried on all sides, with periodic sprinkling of ice-cold water on the skin, encouraging crackling sounds and crispy texture as the moisture creates steam. The frying process takes about 5 minutes per side until the skin is golden and crisp.

The crispy pork is drained on paper towels to remove excess oil and served hot. Lechon Kawali is often accompanied by dipping sauces such as vinegar with garlic or spicy sauce, lending a contrast to the rich and crunchy pork. The combination of tender meat with crackling skin is a key appeal of the dish.

  • 2 pounds pork belly
  • 3 tablespoons salt - for boiling
  • 2 teaspoons peppercorn (whole)
  • 5 bay leaf
  • 1 tablespoon soy sauce
  • 5 cloves garlic - crushed
  • 4 cups water
  • 1 tablespoon salt - for rubbing
  • 2-3 cups neutral cooking oil for frying, generic cooking oil

Instructions

  1. In a pot, combine pork belly, salt, peppercorn, bay leaves, soy sauce, garlic, and water. Bring to boil. Let it cook until meat is fork-tender.
  2. Remove the pork belly from water and let the excess water completely drain. Transfer to a plate and then rub 1 tablespoon of salt all over the meat. Put in the fridge overnight to dry out.
  3. Cut in cubes, about an inch thick. Heat oil in a wok or pot over medium-high heat. Once the oil is hot, fry each side of a cut for 5 minutes while sprinkling the skin with ice-cold water and letting it crackle from time to time.
  4. Remove from hot oil and transfer into a plate lined with kitchen paper towel to remove excess oil.  Serve while still hot with your fave dipping sauce!
