Leftover Chicken Pasta
Description
This recipe starts by boiling pasta until cooked through, then browning leftover cooked chicken in olive oil to develop flavor. Adding light cream cheese and semi-skimmed milk creates a creamy sauce base that melts into a smooth coating. Incorporating sweetcorn and fresh spinach offers texture and mild sweetness balanced by the earthiness of the greens. Stirring in grated Parmesan enhances the savory depth and adds a subtle nutty richness.
The pasta is drained but combined right away with the warm sauce and reserved pasta water, which helps bind the sauce to the noodles and adjust consistency. This dish provides a comforting meal using accessible ingredients and leftover chicken, ideal for a quick lunch or dinner.
For faster preparation, fresh tagliatelle pasta can be used as it cooks quickly. Keep reserved pasta water when draining to loosen the sauce if needed. Optionally, add chili flakes for heat or extra Parmesan and black pepper on top to enrich flavors further. A splash of olive oil added before serving can also add a pleasant finishing richness.
Ingredients
- 150 g pasta
- 180 g chicken chopped, leftover cooked
- 0.5 tablespoon olive oil
- 100 g cream cheese light
- 60 ml milk semi skimmed
- 100 g sweetcorn
- 45 g spinach
- 20 g parmesan grated
Instructions
- Add 150 g Pasta to a pan of boiling water and cook for 10 minutes.
- Heat 0.5 tablespoon Olive oil over a medium heat and add 180 g Leftover cooked chicken. Cook until starting to brown, about 5 minutes.
- Add 100 g Light cream cheese and 60 ml semi skimmed milk. Cook until the cheese has melted, stirring regularly.
- Add 100 g Sweetcorn, 45 g Spinach and 20 g Parmesan. Continue stirring until the spinach has wilted.
- Drain the pasta and reserve a little pasta water. Add the pasta and reserved water to the chicken mixture. Mix well so that all the pasta is coated. Season to taste.
Notes
- Fresh tagliatelle speeds up cooking time if you want a quicker meal.
- Reserve some pasta water before draining to adjust sauce consistency and achieve a silky texture.
- Add red chili flakes if you prefer a spicy kick.
- Enhance the dish by drizzling a little olive oil before serving and topping with extra Parmesan and cracked black pepper.
