Leftover Pulled Pork Tacos

Leftover Pulled Pork Tacos use reheated shredded pork crisped in bacon grease or oil, creating a flavorful, textured filling. The pork is cooked in a skillet until golden brown on both sides before assembling into warmed corn or flour tortillas with toppings like shredded lettuce, diced red onion, cotija cheese, and hot sauce. This approach revitalizes previously cooked pork, offering a quick and tasty taco option balanced by fresh, crunchy vegetables and creamy cheese.

Description

For these Leftover Pulled Pork Tacos, leftover shredded pork is heated in bacon grease or oil on medium-high heat. Cooking it uncovered in an even layer allows the pork to develop crispy golden edges on both sides, enhancing the texture. The crisping not only warms the meat but adds a depth of flavor from the rendered fat. Once the pork is ready, it is served hot inside tortillas which may be corn or flour depending on preference.

Common taco toppings include shredded iceberg lettuce for crunch, finely diced red onion for sharpness, and crumbled cotija cheese which adds a salty creaminess. Hot sauce offers customizable heat. This assembly keeps the tacos fresh and vibrant against the rich pork. They are suitable for a casual meal or using up leftover pork efficiently.
