Ingredients

  • 2 cups roast beef leftover
  • 1 tin tomato 400g, 13 oz, chopped
  • 1 cup beef stock or broth
  • 1 onion
  • 3 garlic cloves
  • 1 carrot large
  • 2 tablespoon neutral cooking oil generic cooking oil
  • 2 tablespoon tomato puree
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 2 bay leaf
  • 2 tablespoon parsley fresh chopped
  • ½ teaspoon chili flakes

Instructions

  1. In a large pan, heat up the oil, and add the peeled and chopped onion.
  2. Fry until golden.
  3. Add the peeled and chopped garlic and carrot, and give it a good stir.
  4. Add the chopped tomatoes, beef stock, bay leaves and chopped beef.
  5. Place the lid on, and leave to cook on a medium heat for 10-15 minutes or until the sauce has thickened.
  6. Season with salt, pepper and chilli peppers, and garnish with freshly chopped parsley.
