Description
Leftover Roast Beef Stew uses cooked roast beef combined with a variety of vegetables such as potatoes, carrots, celery, onion, and garlic. These are sautéed initially to develop flavor and then simmered with beef broth and optional leftover gravy to create a thick, rich base. Tomato puree adds subtle acidity and body, while fresh parsley and dill enhance the overall freshness of the dish.

Ingredients
- 4 potato
- 2 carrot
- 2 celery sticks
- 1 onion large
- 2 garlic cloves
- 2 cups roast beef leftover, cubed
- 2 tablespoon vegetable oil
- 1 teaspoon salt
- ¼ teaspoon black pepper ground
- 2 cups beef broth or stock
- ½ cup gravy optional, leftover
- 1 tablespoon tomato puree
- 1 tablespoon parsley fresh
- 1 tablespoon dill fresh
Instructions
- Peel and chop the onion, garlic, potatoes and carrots.
- Heat up the oil in a large pan, add the onion with a pinch of salt and fry until golden.
- Add the potatoes, carrots, garlic, and chopped celery, and give them a good mix.
- Throw the cooked beef in too.
- Add the gravy and stock, and leave to cook with the lid on until the vegetables are tender.
- Add the tomato puree, herbs, and season to taste.
Notes
- For slow cooker use, reduce broth to about one cup as evaporation is minimal.
- Sautéing onions before slow cooking adds extra flavor but is optional.
- Stew is a convenient way to repurpose leftover roast beef and gravy into a filling meal.
