Peanut Sauce

  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1/2 cup water more if needed
  • 1/8 tsp ginger
  • 1 garlic

Spiralized Carrots, Broccoli, and Chicken with Peanut Sauce

  • 1 cup chicken shredded
  • 4-6 tbsp peanut sauce
  • 1 crown broccoli
  • 2-3 carrot spiralized
  • peanuts optional crushed, for garnish

Healthy Chicken Salad

  • 1 cup chicken shredded
  • 2 cups mixed greens
  • 2 carrot spiralized
  • 1 handful mixed nuts
  • 1 hanfdul lentils 1:3 lentils to water ratio, simmer 10-15 minutes, cooked
  • 2 cups grapes

Easy Leftover Chicken Wraps

  • 2 wraps
  • 1 avocado sliced
  • 2 cup chicken shredded
  • 1 carrot spiralized
  • 1 cup mixed greens

Instructions

Peanut Sauce

  1. In a sauce pan, mix together 3 tbsp of peanut butter, 2 tbsp soy sauce, a bit more than half a cup of water, 1/8 tsp ginger, and a bit of garlic. Mix it until it’s well combined. Note: the more water you add, the less thick the sauce is. Adjust to your preference 

Spiralized Carrots, Broccoli, and Chicken with Peanut Sauce

  1. In a pan, "stir fry" your broccoli and shredded chicken with as much or as little peanut sauce you'd like until the broccoli has softened. Serve on top of a bed of spiralized carrots
  2. Optional: Add some crushed peanuts on top for a little bit of garnish.

Healthy Chicken Salad

  1. In a bowl, combine your leftover rotisserie chicken, spiralized carrots, mixed greens, cooked lentils, grapes, and some mixed nuts! You can eat it as is or drizzle some of the peanut sauce/salad dressing of your choice on top.

Easy Leftover Chicken Wrap

  1. In your first wrap, put together your leftover rotisserie chicken, spiralized carrots, half an avocado, and drizzle on some peanut sauce.
  2. For your second wrap, put together your leftover rotisserie chicken, mixed greens, spiralized carrots, and the second half of your avocado before drizzling some peanut sauce on top.
